Healthy Nachos

I try not to eat refined sugar or refined carbs, so therefore I have had to make several changes in my diet. Nearly everything has sugar in it, from tomato sauces, to flavoured potato chips, to yogurt, party goods, biscuits, drinks, etc… So yes, avoiding it is extremely hard.
So I began to fall in love with the fresh food and the organic sections. My version of Healthy Nachos was one of my first creations after I gave up sugar. I bought organic potato chips cooked in palm oil (Try to avoid heavily processed oils such as Canola Oil, sunflower, safflower etc). Palm Oil was used in Ancient Egypt, and therefore is not a new cheap creation for the mass market. Olive Oil is also extremely good for you. Anyway, I covered the chips in a good quality cheese, and placed it in the oven for 5 minutes at about 150 o C (302 o F). BUT DO NOT PUT IT IN BEFORE YOU COOK THE SAUCE :)
To cook the sauce, I put a table spoon of olive oil in a pan, and an onion and cooked until brown. Then I put 500grams of minced beef in, and cooked it until it was brown. I put two cans of organic canned tomatoes in, and a touch of stevia in to cut away the acidity of the tomatoes (It depends on what stevia product you buy as some can be extremely sweet and others can be weak). I also added in some cumin to give it the Mexican taste that it should have, and you can add chilli in depending on whether or not

you enjoy heat. I cooked it for about 30 minutes afterwards on a smaller flame, and it thickened by it self, but if this does not work for you put a touch of cornflower in to do the job.
While it was cooking I cut up 3 tomatoes, an avocado, and some coriander (cilantro). Mixed that around in a bowl to create a small fresh salad to place over the top of the sauce. I then created the guacamole which consisted of sour cream, mushed up avocado, a touch of lemon and coriander. 5 minutes before the sauce is finished place the corn chips in the oven.
When it comes out, find a serving dish, put the corn chips on the plate, followed by the sauce, then the salad, the guacamole, and then a few sprigs of coriander.
A nutritious and filling meal for people who are always on the run.
